Brunching In Las Vegas – Smoked Salmon and Crispy Potato Waffle
Sunday Brunch has become a favorite pastime for many foodies, and here in Las Vegas, we take brunch to the next level. Of course at Eiffel Tower Restaurant “next level” is literal, as we sit 110 feet above the Las Vegas Strip overlooking the world famous Bellagio Fountains. Picking a favorite brunch dish would be impossible, but one of our favorites is our Smoked Salmon and Crispy Potato Waffle.
If you have never had a potato waffle, trust us when we tell you it is worth a visit all by itself. We start with Yukon gold potatoes, cooked until tender, and then add butter, milk, flour, egg, crème fraiche, and chives. We cook the waffle until crispy and golden brown and then top with our cold smoked salmon, lemon crème fraiche, chopped egg, shallots, capers, and fresh dill. This dish is featured on our Brunch tasting menu, available Saturdays and Sundays from 10am to 3pm. We recommend pairing it with a glass of Chardonnay or Pinot Noir.
